Our cold smoked lox features Chinook salmon gently marinated in our brine of salt and sugar and then smoked with natural hardwood smoke that is cooled outside of the smokehouse before it envelopes the fish. This process "preserves" the fish, rather than cooking it. You will find our lox has a gentle, delicate flavor that is unlike any other.
